Spinach and Sun-dried Tomato Orzo Salad by Bart SwanBy: Bart Swan

The Recipe:
Can be Served Warm or Chilled
- Olive oil
- 3 cloves garlic - minced
- 2 medium yellow onions chopped or sliced
- 2 lb. mushrooms cleaned and halved
- 2 bags baby spinach
- 1/3 box Orzo
- 6 oz sun dried tomato cleaned and halved
- 3 oz pine nuts
- 6 oz feta cheese
Cook orzo till done and chill
Over medium heat sautee onion and garlic in olive oil
Add mushrooms and sautee till tender
Lower the heat and add one bag spinish
Cook till spinich is wilted
Microwave 2nd bag of spinish till al dente and add to sautee
Add orzo and mix
Add sun-dried tomatoes and 2-3 tablespoons of oil from tomato jar
Mix 1/2�of the pine nuts and feta
Top with remaining pine nuts and feta
Serve warm or chilled
