Cold Rice Dish with Nuts and Raisins by Annie Clark

  • Ingredients:

    • 1 cup (1/2 lb.) raw wild rice
    • 5 1/2 cups chicken stock (or water)
    • 1 cup nuts, walnuts (or pecans)
    • 1 cup dried cranberries (or raisins)
    • Grated rind of 1 large orange
    • 4 scallions or 1 white onion
    • 1/4 cup olive oil
    • 1/3 cup OJ
    • 1 1/2 tsp salt
    • Pepper to taste

    Rinse rice in strainer and put in large pot Add stock and bring to boil Simmer and cook 40-45 minutes uncovered Dice scallions and add to all other ingredients

    Toss remainder of ingredients with rice. May substitute 1 cup of brown rice if desired.
